Black Risotto
First thing I order when I arrive to Dalmatia on the Croatian coast is a Black Risotto. Some of the best risottos are featured in our Croatia Guide, but I have to say that this recipe is better.
Ingredients:
Onion, garlic
Fresh tomatoes (one or two will do)
Dried thyme and fresh parsley
Risotto rice
Squid ink
Calamari
Shrimps
Parmesan or any hard cheese you like
Fish stock
White wine
Olive oil, salt
How to do:
Fry up chopped onion and garlic with olive oil in a pot on medium heat. Add a chopped tomato, the dried thyme and let it all melt together. Add the rice and fry it while stirring. Add fish stock, a little at the time and stir occasionally. Add white wine and make sure there is always some liquid in the pot to prevent it from burning in the bottom. Don't add all the liquid at one time. Risotto doesn't take more than 20 minutes to make. Prepare the seafood, peel shrimps, clean the calamaris and add them at the very end together with the squid ink. Cook the seafood for maximum 3 minutes and finish it off with grated cheese and fresh cut parsley.
