Chocolate Cake
When I was a teenager I spent hours and batches to develop the perfect chocolate mudcake. After many tries I finally made up my mind of my favourite recipe and here it is...
As the main ingredient is chocolate, choose a high quality chocolate and cocoa powder. The brown sugar gives the cake a caramelized taste.
Ingredients:
180 g all purpose flour
120 g brown sugar
90 g granulated sugar
3 eggs
150 g room temperatured butter
100 g 70 % chocolate
30 g fine cacao powder
1,5 teaspoon of vanilla sugar
1,5 teaspoon baking soda
Fresh berries and whipped cream to serve
How to do:
Preheat oven to 220 celsius degrees. Prepare a round springform pan with baking sheets. Beat eggs and whisk up with sugar until dissolved. Mix flour, baking soda, vanilla sugar and cocoa powder and add into the mixture. Melt chocolate and use an electric mixer to combine with the soft butter. Add eggs and chocolate butter into the mixture and mix on medium speed until well combined. Pour mixture into the pan and let bake in the middle of the oven for about 10-15 minutes. It should not be cooked all the way though. Let cool and serve with fresh berries and whipped cream. If you have the patience, let the chocolate cake sit in the fridge overnight and you will have a more fudge-like cake.
